Tasting Notes

Ruby red colour. On the nose, powerful with notes of red plum. Good oak balance. On the palate, round, with notes of ripe plums and very good tannins.

Valle de Colchagua, Chile.

Harvest

100% hand picked.

Vinification

Hand sorting of the grapes before destemming.

Pre-fermentive maceration for 6 to 10 days at 6ºC.  Alcoholic fermentation in stainless steel tanks for 16 days at 28-30ºC. Post ferment maceration for 2 days.

Run off and malolactic fermentation.

Ageing

10% aged in French oak barrels for 4 months;

90% in stainless steel tanks

Food Pairings

This friendly wine is well suited for a variety of meats and side dishes. Pork chops, sauted vegetables, grilled burgers, mashed potatoes or a juicy steak taste very good with this Cabernet Sauvignon. If feeling like Italian, spaguetti bolognese should be the choice
